Ok, so it’s food friday and today I’m going

to give you recipes for great tasting desserts

that are seasonal and healthy, helping you get

more fruit in your diet

 

The recipes are really easy to make

and the trick is to cook them while you are

making your dinner and timing them so they

are ready to eat about 10-15 min afterwards

 

Poached Pears (serves 4)

250ml fresh orange juice

250ml water

1/2 in piece of ginger

6 cloves

1 cinnamon stick

zest of 1 orange

8 ripe pears

 

heat all ingredients (except pears) in a saucepan, peel and core the pears then place the pears in the liquid (make sure they are covered). Simmer for 30 minutes, or until soft and serve warm.

 

Baked apples with fig stuffing (serves 4)

4 cooking apples, cored

handful of figs

handful of walnuts

100ml of apple juice or water

 

cut a slice from the bottom of the apples and sit them flat on a baking tray, push the walnuts and figs inside the apple and drizzle the apple juice or water around the apples and bake in the oven for 40 minutes or until tender.

 

Pear and berry pudding (serves 4)

6 medium pears, peeled, cored and cut into chunks

350g forrest fruits

3 tbsp brown sugar

4 tbsp any berry jam

50g wholemeal breadcrumbs

30g butter (unsalted)

 

Mix the forrest fruits, with the sugar, jam and pear, place in a baking dish, cover and bake for 20 minutes until they feel soft. Mix the butter and breadcrumbs and place on top of the pear mixture, bake for another 15 minutes until golden and crispy.

 

Banana and pecan vanilla yoghurt stack (makes 1)

Peel and chop 1 or 2 bananas

1 tub of plain yoghurt

2 drops of vanilla extract

handful of pecans

 

mix the vanilla in  with the yoghurt, layer the ingredients in a bowl, finishing with some pecans on the top
