I was hoping to get the workout to you this
week, I’ve written the post and filmed the
video but it’s been taking some time
uploading then failing, so I’ll give it another
try today and get it to you for Monday
As promised, my favourite recipe for the
week is a Chicken and Cashew Stir Fry
I love Chinese food but it’s always so
difficult to recreate at home, it never tastes
the same
but this recipe is really good and even
Ryan says it’s as good as the real thing and
it’s now our Wednesday night regular
I hate recipes with too many ingredients
or that are complicated to make, so this
one is perfect and it’s dead easy to make
Not too expensive either once you’ve
bought the ingredients, they’ll last a few
times
Chicken and Cashew Stir Fry (for 2)
Ingredients
2 large chicken fillets
light soy sauce
white pepper
flour
oil for stir frying
2 garlic cloves, crushed
1 onion, sliced
4 spring onion, sliced
fish sauce
oyster sauce
dried chillies
cashew nuts, toasted
rice, to serve
Preparation
Cut the chicken into chunks and marinate
in the soy sauce and white pepper for 30
minutes (I usually manage 10 min)
Toss the chicken in some flour until it is
all covered and start cooking the rice
Put some oil in the wok and cook the
chicken over a low to medium heat until
the chicken is nice and crispy (10-15 min)
Remove the chicken and add some more
oil, gently stir fry the garlic, onion and
spring onion until soft, add the chillies
and cashew nuts
Add the oyster and fish sauce, about a
splash or to your preference, then add the
chicken back in and warm through
Serve with the rice
