Ok, so I’m a little late this month with the

Christmas recipes but what I thought

would be a really cool thing to do, is to get

you guys to share your favourite recipes!


You might have some that have been

down through the family, like shortbread

or Xmas pudding or soup


or more modern ones like flavoured

vodka (Keryes) and mulled wine


If you can do a quick copy and paste then

great, get them over to me or if its hand

written or in a book, take a photo and

send that instead


Then I’ll get the recipes up asap


In the meantime, this is my favourite

recipe at the moment…


Chicken and Sun Dried Tomatoes with

Shaved Courgette (for two)

1 tablespoon butter

2 chicken breasts, cut into strips

120g sun dried tomato in oil, chopped

2 cloves garlic, peeled and crushed

150 ml Cream, reduced fat or full fat (or half and half)

handful Parmesan

Salt, to taste

Basil, dried

Red chilli flakes, as desired

2 large Courgette, shaved with a peeler


1. Heat the butter in a pan/skillet over medium high heat. Add the chicken strips and sprinkle with salt. Pan fry until the chicken is golden browned on all sides and cooked through.

2. Add both semi-dried and sun dried tomatoes with 1 tablespoon of the oil from the jar, add the garlic; sauté until fragrant.

3. Lower heat, add the cream and the Parmesan cheese; simmer while stirring until the cheese has melted through. Sprinkle over salt, basil and red chilli flakes to your taste.

4. Stir through the Courgettes and continue to simmer until they have softened or heated through and serve.

One of my clients suggested that she would

swap the cream for a can of tomatoes and

ginger instead of the garlic, so that would

work too 🙂
